It all starts with milk. More specifically, the cream that rises to the top. At Walker Farms, we use milk from our own happy, A2 herd. The high butterfat content in our milk is key to achieving that rich, velvety texture you love.

We separate the cream from the milk using a centrifuge, a process that mimics the natural separation that occurs when milk sits still. This cream is the foundation of great butter.

Step 2: Churning Magic

Churning is where the magic happens. The cream is agitated, causing fat molecules to clump together and separate from the buttermilk. This simple yet transformative step is the essence of butter-making.

At Walker Farms, we churn our butter the traditional way, carefully controlling temperature and timing to achieve a smooth, creamy consistency. The butter is then rinsed to remove excess buttermilk, enhancing its shelf life and flavor.
